Honestly….either people are completely overreacting or not reacting to this pandemic as seriously as they should be. There is very little in between.

Stop stealing, buying, and hoarding N95 masks. Hospital workers desperately need them. PPE supplies are dangerously low and are needed now more than ever.

I am currently laid off, I work as a peds care tech for one little patient and they are quarantined from the outside world. During this down time I am going to try to get my sewing machine up and running so I can make masks for all of my nurse and tech friends who need them. Is this the best option? No, but it’s better than the scarves a lot of my nurse friends are having to use as makeshift masks.

If you have unopened boxes of masks that you felt the need to hoard…do everyone a favor and donate them to your local hospital.

Self Love vs. Self Care

Self care is great, but self care doesn’t necessarily equal the self love that this world talks about. Self care is self preservation…loving yourself AND taking care of yourself. It’s reading your Bible, sleeping, showering, take your medication, doing your laundry, going to the gym…things like that. 

Our society seems to be so caught up on self love. Self first. Others last. That’s not how Jesus functioned. That’s not how He operated. He was love others and also self care. He taught others how to put others before themselves. While He also was the example of napping and eating and taking time away from everything going on to sit in a garden and pray. He took care of himself and was able to love and take care of others. What a concept.

He was love others and self care. Can we all agree that this self love and finding yourself is a gigantic waste of time and is so far from what Jesus intended when He was on this earth? Jesus didn’t say to His disciples, “I need to leave you and go find myself. I need to learn how to love myself. You guys figure this out on your own.” Nope. He was alongside of them during His ministry. He loved them. He did life with them. Alongside of them. He loved others. He cared for people before Himself. He literally died for us, taking on the sins of the world, and saving us!

Veg-ify Boxed Mac & Cheese

One of E’s favorite things to eat is boxed mac & cheese. Don’t worry, it’s definitely Annie’s boxed mac & cheese…but still…it’s boxed mac & cheese. One way to incorporate veggies and healthy fats into this otherwise not so healthy dish is this recipe.

  • 12 Baby Carrots
  • 1 Celery Stalk
  • 1 Avocado
  • 1/2 C Water
  • 1 Box of Mac n Cheese
  • Salt
  • Pepper
  • Garlic Powder
  • Onion Powder
  • Paprika

Steam celery and carrots in water, puree with avocado and powdered cheese packet with an immersion blender. Mix the puree in with the cooked pasta and serve.

It’s so easy to make and packs in much needed veg!

Just Eat

1 Corinthians 10:31 “So whether you eat or drink or whatever you do, do it all for the glory of God.”

1 Samuel 1:18 “…Then she went her way and ate something, and her face was no longer downcast.”

1 Kings 19:4-8 “But he himself went a day’s journey into the wilderness and came and sat down under a broom tree. And he asked that he might die, saying, “It is enough; now, O Lord, take away my life, for I am no better than my fathers.” And he lay down and slept under a broom tree. And behold, an angel touched him and said to him, “Arise and eat.” And he looked, and behold, there was at his head a cake baked on hot stones and a jar of water. And he ate and drank and lay down again. And the angel of the Lord came again a second time and touched him and said, “Arise and eat, for the journey is too great for you.” And he arose and ate and drank, and went in the strength of that food forty days and forty nights to Horeb, the mount of God.”

I was so touched by this verse that I had to text my man about it. I can get quite cranky when I’m hangry and he tends to be the receiver of my crankiness.

So many times in scripture food is referenced! Sacrificing food, gathering around food, gifting food, food falling from Heaven, food, food, food. God knows that we need food. Jesus was on this earth and His ministry was bringing food to people, fishing for food with people, gathering around food with people, sharing important news with people over food, using food as a representation of his body! FOOD!

The Bible also talks about what to eat, not to eat too much, and treating your body as a temple. Not to just be gluttons, but to appreciate food, and take care of our bodies.

Mental health and moods are included in that ‘taking care of’ bit. So enjoy the cake but also eat the foods that are going to nourish us and keep us from being miserable to those we are called to love.

Easy PBFit Smoothie

I highly recommend keeping frozen bananas in your freezer for quick morning smoothies. This took exactly 3 minutes to make. I have no excuse not to make this for quick and easy breakfasts in the future.

  • 1 Small Frozen Banana (90 calories, 1g protein, 12g sugar)
  • 2 Cups Unsweetened Almond Milk (60 calories, 2g protein, 0g sugar)
  • 3 TBS SF PBFit Peanut Butter Powder (90 calories, 12g protein, 1.5g sugar)
  • Drizzle of Blackstrap Mollasses (30 calories, 1g protein, 5g sugar) 

Totals: 270 Calories, 20g Protein, 18.5g Sugar

Without Mollasses Totals: 240 Calories, 19g Protein, 13.5g sugar)

I may have accidentally drank almost all of this smoothie before remembering to take a photo! Sorry not sorry, it was so delicious!

I am iron deficient so I jump at any chance to eat blackstrap mollasses, and the little bit of sweetness this added to the smoothie was needed. You don’t have to add this, it is 5g of unnecessary sugar. I can’t wait to see what other good things I can make with PBFit powder.
